Our version of the ‘Jungle Curry’ is made with the addition of coconut milk, which is not a traditional ingredient, but we think it works!. This Thai dish is made with fiery birds eye chillies, lemongrass and kaffir lime leaves. It’s a beautiful fragrant curry that works well with meat, fish or veggies. We suggest that you add Thai fish sauce at the end of cooking, but if you like, you can substitute for soy sauce or tamari for a vegan alternative.

Our version of the ‘Jungle Curry’ is made with the addition of coconut milk, which is not a traditional ingredient, but we think it works!. This Thai dish is made with fiery birds eye chillies, lemongrass and kaffir lime leaves. It’s a beautiful fragrant curry that works well with meat, fish or veggies. We suggest that you add Thai fish sauce at the end of cooking, but if you like, you can substitute for soy sauce or tamari for a vegan alternative.

 

Instructions

Heat 1 tbsp of oil in a pan, over a low heat. Add the spices and stir until fragrant. Add approx. 800g of meat/vegetables to the pan and coat in the spices. (If using fish, add at the end of cooking and poach in the liquid for a few minutes until cooked). Add 400ml of coconut milk, followed by the onions and garlic and stir. Add 1 tbsp of thai fish sauce and simmer on a low heat for approx. 20 mins, or until the onions are soft. Once the meat/veg is cooked and the onions are soft, add a squeeze of fresh lime and serve with your choice of sides.

For a vegan alternative, use soy sauce or tamari in place of the Thai fish sauce.
