Bhajis are a popular Indian snack that can be enjoyed as an appetiser and served alongside a cooling raita or a spicy chutney. The most popular addition to this Bhaji mix, is of course onions, but if you’re feeling adventurous, why not try other veggies such as cauliflower, aubergine or courgettes? Our version of the Bhajis have been developed with your health in mind and so we suggest baking the Bhajis in the oven. If you’re feeling a bit naughty though, they can be deep fried!

Instructions
Heat the oven to 170°c (fan assisted). Peel and thinly slice 2 medium sized onions (approximately 350g). Fry the onions in a little oil, until translucent. Add the spices to the onions and mix well. Remove from the heat. Place the Gram flour in a bowl and add 100ml of cold water. Mix to form a smooth batter. Add the butter mixture to the onions (stop adding when they are lightly coated) and stir well. Lightly oil some foil and place on a baking sheet. Divide the Onion Bhaji mix into 8 equal portions and spoon onto the foil sheet. Bake in the oven for 20-25 minutes. Serve with Mint & Lemon Raita.
